Chiken tenders, slice chicken breasts into strips, coat with egg whites then roll in quick oats, bake in oven.

Veggies and fat free dip

Pasta salad, use the tri colored pasta, chopped carrots, and veggies and fat free italian dressing

Sun chips are delicious made with whole grain and 30% less fat than chips

Edy's churn style ice cream is better than most regular ice creams with half the fat.

Bake the cake with applesauce in place of oil and cut major fat! You can't tell the difference!Healthy recipes for babies first birthday?!?!?
How about Shepherd's Pie and Vegetarian Pasta?

How old are the kids? If they're old enough to chew and have all their teeth (LOL!) I'd go with the standard cookout. (I assume you're having this at your house?). Just fire up the grill and cook some lean ground beef patties and some hotdogs. You can use whole wheat buns to make them sort of healthier, but it's a birthday party--it's not supposed to be healthy!! Besides--why cook healthy when all the kids are just going to be cracked out on a sugar high from the cake and icecream later anyway? :)

Seriously though--using lean ground beef (the super lean stuff--I think it's 7% or 8% fat) really isn't that bad for you. If you wanted, you could even make the veggie dogs (I haven't tried them myself, so I can't vouch for them, but we're talking about kids here--they don't care--all they know is that it's a hot dog!). Potato salad (you can sub. reduced fat mayo), maybe celery and carrot sticks with a low-fat ranch dressing/dip. I really don't think the kids will care one way or the other what you make--they just want to have fun and eat cake and icream and play with their friends. :)
fruit salad and maybe little cupcakes :D
there are some crock pot meals hope one works for you happy birthday to your little one
sloppy joe's and baked mac and cheese is good for all ages.
