My son just moved into his first apartment and needs some real easy, healthy and cheap recipes. Any ideas?

www.allrecipes.com is a brilliant community based (and sponsored) website. I use it all the time. You can build him a virtual cookbook on-line using the recipes from the members. Otherwise, I second the Rachel Ray suggestion for basics. Basics to keep on-hand would be: Multi-grain tortillas, tuna and chicken and salmon are all reasonable and healthy if prepared well. Another suggestion....if one or both of you find a recipe....consider cooking 'along' w/ him. You make it the same weekend he does and compare notes. My mom and I do this all the time. ';Warm Ham 'n' Swiss Wraps'; - 6 servings





6 (10';) flour tortillas


1 lb. thinly sliced deli ham


2 cups (8 oz.) shredded Swiss cheese


3 cups chopped lettuce


1 medium tomato; seeded and diced


1/2 cup diced cucumber


2 tbsp. chopped green pepper


2 green onions (scallions); chopped


DRESSING:


3/4 cup mayonnaise


3 tbsp. milk


2 tsp. sugar


1 tsp. prepared mustard


1/2 tsp. celery seed





On each tortilla, layer four slices of ham and 1/3 cup cheese; roll up and secure with toothpicks. Place in an ungreased 11x7x2'; baking pan. Cover; bake at 350* for 14-16 minutes or until cheese is melted.


Meanwhile, combine lettuce, tomato, cucumber, green pepper and onions. In a small bowl, whisk the dressing ingredients. Unroll tortillas halfway; top each with 1/3 cup lettuce mixture and 1 tbsp. dressing. Roll up again; serve immediately.


(Note: If you don't want to eat 6 of these at one time, use your leftover prepared ingredients for a salad.)








';Glazed Carrot Coins'; - 4 servings





2 tbsp. butter


2 tbsp. brown sugar


2 tbsp. orange juice


1/4 tsp. salt


1/4 tsp. ground ginger


1/8 tsp. ground cinnamon


6 medium carrots; cut into 1/2'; slices





In a small saucepan, melt butter over medium heat. Stir in remaining ingredients except carrots. Add the carrots; cover and cook for 20-25 minutes or until tender, stirring occasionally.








';Sunny Carrot Salad'; - 5 servings





3 cups shredded carrots


2 cups unsweetened crushed pineapple; drained


1/2 cup golden raisins


1/3 cup mayonnaise


1/2 cup sliced almonds


1/3 cup unsalted sunflower kernels





In a large serving bowl, combine carrots, pineapple and raisins; stir in mayonnaise. Cover and refrigerate until serving. Just before serving, add almonds and sunflower kernes; toss to coat.








';Chicken Pepper Stir-Fry'; - 3 to 4 servings





1 EACH small green, sweet red and yellow pepper; julienned (thin strips)


1 medium onion; quartered


2 garlic cloves; minced


4 tbsp. olive oil; divided


3/4 lb. boneless, skinless chicken breasts; cubed


3/4 tsp. Cajun seasoning


1/3 cup packed brown sugar


2 tsp. cornstarch


1 tbsp. water


1 tbsp. lemon juice


1 tbsp. honey mustard


1 tsp. soy sauce


1 tsp. Worcestershire sauce


Hot cooked rice





In a large skillet, stir-fry the peppers, onion and garlic in 2 tbsp. oil until crisp-tender. Remove and keep warm.


In same skillet, stir-fry the chicken and Cajun seasoning in remaining oil until juices run clear.


In small bowl, combine remaining ingredients (except rice); pour over chicken. Return pepper mixture to the skillet; cook and stir 1 minute. Serve with hot cooked rice.
i learned to go international -- i cook a meal for 4 and eat it for 4 days -- have him learn to cook soups and stews -- they are better as leftovers and throwing a cup of cheap wine in and a couple of herbs can make all the difference.





good easy things to make are like tortilla espanola -- its an omlette with onion and potatos in it. while i was in spain i had toast w crushed tomatos on it and its prefect with the tortilla. it sounds soggy and nasty but its really good! in spain they keep tortillas around and snack on it all day. its also common food in bars and is great with a cup of wine.





the unofficial dish of portugual is caldo verde. its a soup of potatos kale and sausage. with some bread its awesome.





i also like spansh bean soup -- its garbanzos, potatos and sausage.





there are a billion recipies for any of these on the internet.





instead of eating hamburgers out i make meatloaf into burgers and its the only way a hamburger is tasty enough to me to want to eat one at home. i usually use tyler florences recipe from foodnetwork.com. i substitute wine for milk. I like cooking with wine. like i said before i think a cup of cheap wine can make all the difference in the taste of food. These are also great with oven fries and not much compliments oven fries. The burgers can be frozen cooked or uncooked and the tomato relish keeps for weeks.

A Man, A Can and A Plan is a great cookbook to give him, also The Can Oppener Gourmet (by Laura Karr) is another good one --all the recipes use pantry ingredients and are really good. But my favorite thing to give a bachelor (or bachelorette) for their first home is a crockpot--they can dump everything in it and have a meal waiting when they get home from work, they have lots of leftovers, most recipes are pretty cheap to make, and it doesn't require much cooking skill! My favorite crockpot cookbook is Fix It and Forget It (Dawn J. Ranck and Phyllis Pellman Good)


Here's a couple of examples of the recipes:





SLOW COOKER BEEF SANDWICHES





one 2-3 lb. chuck roast cubed (or beef stew meat)


1 pkg. dry onion soup mix


one 12oz. can cola





Put meat in crockpot, sprinkle with soup mix, pour cola over it, cook on low 8-10hours, serve as a roast or shred for sandwiches (good with coleslaw)--Also get him those disposable crockpot liners, bachelor's usually have better things to do than clean up!

ITALIAN BEEF


one 3-4lb beef roast


1 pkg. italian dressing mix


12 oz. can beer





Dump it all in the crockpot and cook low 8-10 hours, serve with mashed potatoes, rice or on rolls for sandwiches.

I also do my own recipe of one 2-3lb. beef roast or pork roast and half a bottle of barbeque sauce, cook low 8-10 hours or high 3-4 (even works if you forget to thaw the meat, just have to cook on high longer!)--





Make him a housewarming basket with a couple of cookbooks, pots utensils, oven mitts, dish towels and use the crockpot as the basket!

I have my quesadillas. Easy, fast, and cheap, can be made for 2-8 people really easily.





2 boneless chicken breasts, cooked and sliced


Whatever cheese he would like, shredded


Tomatoes


Mushrooms, sauteed is best


Chili powder


salt, pepper, and whatever other spices you like to taste


Onions and jalepenos optional


about 8 Flour tortillas





This is a very ';guess and get it'; recipe. Pretty much, whatever you think you is right.





Pre-heat the oven to about 375.





Combine all the ingredients in a big bowl.





Put half the tortillas on a non-stick or lightly greased baking sheet. Spoon filling onto tortillas.


Place the other half on top of the filling.





To weight it down and make sure your quesidallias are flat, put another baking sheet on top of the quesidellas (oil the bottom lightly, keeps it from sticking), and then wrap some bricks in aluminum foil and put them on top. A baking pan filled with water will do the same trick.





Bake in the over for about, oh, five minutes. Until the cheese is melted. Cut into quarters and serve.





Also, Rachael Ray has some really good cookbooks out there. She's the queen of fast, easy meals.

EASY BEEF ENCHILADAS


1 Lb. ground beef


1 (19-oz.) or 2 (10-oz.) cans Old El Paso Enchilada Sauce


6 oz. (1 1/2 cups) shredded cheese


1 (12-ct.) pkg. Ole El Paso Flour Tortillas for Soft Tacos %26amp;


Fajitas





Heat oven to 375*F. Brown ground beef over medium-high heat


until thoroughly cooked; drain. Stir in 3/4 cup Enchilada sauce


and 1 cup cheese. Spoon enchilada filling onto tortillas;


roll-up and place seam-side down in lightly greased 13 x 9 x


2-inch baking dish. Pour remaining enchilada sauce over top;


sprinkle with remaining 1/2 cup cheese. Bake at 375*F for 15 to


20 minutes. Makes 12 Enchiladas
chili:





kidney beans, pinto beans, tomato paste or sauce, browned hamburger, and spice to taste (garlic, cumin, tarragon, pepper, sugar-that's what I use but whatever he likes will work)





brown the hamburger and have the rest of the ingredients heating slowly over low heat in a covered pot, when the hamburger is done add it to the other ingredients





It is best when seasoned (by letting it cook slowly for a long time or saving it until the next day after cooking) but it never lasts that long in my house.
