Can anyone recommend some healthy recipes for dinner?

Homemade Chilli.....





Mince, onions, sweetcorn, peas,beans, chilli powder. Let it cook for about an hour. Yum. Healthy, cheap, and it tastes even better the next day!Can anyone recommend some healthy recipes for dinner?
My favorite ';quicky'; Friday night meal is Linguine w/ Broccoli:





Rinse %26amp; chop your broccoli into large yet bite-size pieces. Steam them for about 8 minutes until tender-crisp.





In a large, heavy saute pan, heat 3 tablespoons of ex. virg. olive oil. Add to that 1 tablespoon of butter. When butter starts to sizzle a little, add 3 cloves of minced fresh garlic (not jarred), 1 med. onion chopped, %26amp; saute @ medium, stirring occasionally for about 8 minutes, until they are softened %26amp; translucent. Season w/ salt, black pepper %26amp; red chili flakes (as much as you like). Turn burner up to Med. High %26amp; pour in 1 can of chicken broth. It should sizzle when it hits the pan. Immediately add 1/2 C of heavy cream %26amp; keep on med. high, stirring for about 2 minutes. Lower heat to med/low %26amp; let simmer %26amp; reduce for about 7 minutes. Add broccoli to sauce %26amp; stir so broccoli is incorporated.





Prepare 1 lb. of linguine. If it's Barilla, just follow the directions.





Remove sauce from heat %26amp; stir in 1 C of grated fresh parmesan cheese. Pour over pasta %26amp; serve. You won't be sorry! :)Can anyone recommend some healthy recipes for dinner?
Hey Chris, these are some suggestions:


ZESTY MINESTRONE ingredients: *1/2 c onions, chopped *2 cloves garlic, minced *20 ozs chicken or vegetable broth *1 1/2 c water


*6 ozs tomato paste *1 tsp Italian seasoning *1/4 tsp black pepper *15 ozs mixed vegetables, canned and drained *1/2 c elbow macaroni, uncooked


PREPARATION:


1. Put onions and garlic in a medium pot and cook until tender.


2. Add broth, water, tomato paste, seasoning, and black pepper to the onions and garlic. Stir and bring to a boil.


3. Reduce heat to low and cook for ten minutes.


4. Add mixed vegetables and macaroni. Bring to a boil.


5. Reduce heat to low and cook ten minutes, or until macaroni is done.





LOW FAT CHEESE RAVIOLI ingredients: *3/4 cup part-skim ricotta cheese *1 ounce (about 1/4 cup) grated Parmesan cheese *1/4 cup chopped fresh basil *1 egg *1 garlic clove, pressed *Pinch of ground nutmeg *24 pot-sticker or gyoza wrapper *Light Tomato Sauce *2 tablespoons grated Parmesan cheese *Additional chopped fresh basil


PREPARATION: Combine first 6 ingredients in medium bowl. Add salt and pepper. Place 1 rounded teaspoon of filling in center of gyoza wrapper. Brush edge of gyoza wrapper lightly with water. Fold wrapper in half, making sure all filling remains inside.. Seal edges by pinching. Move ravioli to baking sheet. Continue with remaining filling and wrappers. (Can be prepared up to 2 hours ahead; refrigerate.) Add salt to large pot of water. Bring to boil. Gently add ravioli to pot. Cook about 3 minutes until ravioli are tender, stirring gently. Using large slotted spoon, place ravioli into bowls. Pour sauce over ravioli. Sprinkle each with 1/2 tablespoon cheese. Garnish with additional basil and serve immediately.





MANDARIN ORANGE SALAD WITH KIWI ingredients: *6 cups mixed salad greens *2 kiwi fruits, peeled and sliced *1 11-ounce can mandarin oranges, drained *2-3 thin slices of red onion`


PREPARATION: Rinse the salad greens thoroughly and dry. Arrange greens on 4 individual plates. Scatter the kiwi, mandarin oranges, and red onions attractively on top. Serve with Orange Balsamic Dressing.
