Awesome healthy recipes?

I have a lot of time on my hands during the day, and since my parents don't get home until 4, i have to make breakfast and lunch. i'm really tired of cereal and sandwiches. Are there any really complex, healthy, and tasty recipes that you can offer me? THANKS! I need as many as possible :DAwesome healthy recipes?
Southwest Stuffed Potatoes





4-6 boneless, skinless chicken breasts


Figaro Liquid Fajita Seasoning


4 large baking potatoes


4-6 ounces light cheddar cheese, grated


green chili salsa





Wash and cube raw chicken breasts. Marinate in fajita seasoning. Bake potatoes 1 hour and 15 minutes at 400 degrees (adjust time for more or less potatoes). Spray Pam in a large skillet. Turn heat on high and pan fry chicken burning often, about 15-20 minutes. Open potatoes, top with chicken, salsa and grated cheese. A whole meal in itself!





Easy Chicken Lasagna





2 lb boneless chicken


1 onion chopped


1 green pepper, chopped


salt, to taste


pepper, to taste


oregano, to taste


Italian seasoning, to taste


2 8-ounce cans tomato sauce


low fat cottage cheese, small carton


pasta of choice (lasagna, rigatoni, large shells, etc.)


3 c grated cheese





In a large pan sprayed with Pam, cook onion, pepper and chicken until tender. Season, add tomato sauce. Cook pasta according to package directions. Drain and add cottage cheese to pasta and stir. Place in large oblong baking dish and top with chicken, onion and green pepper. Top with grated cheese and bake at 400 degrees until cheese is melted and bubbling.

Fruit Kebabs





Thread fruit of choice (strawberries, mango, cantaloupe, pineapple, dates, apple, etc) onto small skewers.





Recipes Instructions


Sprinkle with lime juice. Arrange on a glass platter.


Serve with lemon light fruche.





A light warming under the griller


or on the barbecue


makes these delightful fruit kebabs very flavoursome!.








Chicken Italiano





路 4 skinned chicken fillets (120gms each)





3 tablespoons grated onion


路 1 clove garlic, crushed


路 1 large can peeled tomatoes


路 1 tablespoon Italian parsley


1 tablespoon mixed herbs


陆 teaspoon ground oregano


freshly ground black pepper








Dry fry onion and garlic in a non-stick pan. Mash tomatoes, and add to pan. Simmer until sauce is thick. Add spices and parsley. Simmer for five minutes. Saute chicken breasts in a non-stick pan. Place in a casserole and pour over sauce. Bake at 180C for one hour. Serve with fresh vegetables and a large green salad








San Choy Bow





3 green onions finely chopped


路 2 teaspoons grated ginger


路 200gm firm tofu


路 1/3 cup chopped water chestnuts


路 2 tablespoons chopped bamboo shoots


路 陆 stick of celery finely chopped


路 1 tablespoon light soy sauce


路 陆 tablespoon oyster sauce


路 17 witlof leaves or lettuce leaves


路 vermicelli rice noodles, optional, to serve





Dry fry green onion and ginger


and cook over low heat until onion is soft.


Add water chestnuts, bamboo shoots and celery


and cook for two minutes.





Gently fold through chopped tofu.


Stir in sauces and cook until sauce has reduced.


Spoon filling into witlof leaves and serve


on a bed of vermicelli rice noodles.
