Pretty much just for dinner, family of 3 including a 6yr old.
Thanx in advance for any suggestions!Easy, healthy recipes on a budget?
I feel your pain - that's the same story everywhere these days.
Pasta, beans, rice - good old staples. Cheaper cuts of meat that require slow cooking will go far but need a longer cooking adn sometime preparing. Basically the more you're willing to do to prep, the cheaper you can eat. Usually more healthy too.

I know these aren't recipes, but those sites usually have recipes in them. Try the ';Grocery Game'; website.Easy, healthy recipes on a budget?
I grew up in a family of six kids and two parents on a very limited budget, but we ate great!
Go for things like:
Pasta with marinara sauce
soup cooked with beans and a little pasta (pasta fagioli)
Rice and chicken (you can use thighs, very inexpensive)
Sausage cooked in slices with apples, serve over pasta
homemade mac and cheese
Sloppy joes, or tacos (I like to use ground chicken or turkey)
Veggie chili
Quiche is easy, inexpensive and delicious
Good luck!
This is a great one:
Ingredients:
Skinless chicken breast/mini fillets- 拢5 for 2 packs at tescos (345g per pack)
Torilla wraps- pack of 8 for 拢1.19 at tescos
Cucumber-拢0.68p
Lettuce-拢0.47p
Mayonnaise-拢0.84 (Tescos own)
Of course you can use any other vegetables and condiments
Method:
Put the chicken into a slightly heated pan of oil, when the chicken is white all around (around 5 minutes if cooking from defrosted, which is the best way) Then add a seasoning, anything really, from basil to curry powder. While the chicken is cooking cut the cucumber into small pieces (kids are less fussy) and do the same with the lettuce. Make sure you wash the chicken (prior to cooking) cucumber and lettuce. When the chicken has cooked entirely (cut the largest piece open, ensure it is not pink and the juices run clear) Heat the tortillas in the microwave as per instructions on the pack. Spread mayonnaise over the wraps (gives taste and helps them stay closed) Place several pieces of chicken and some of the lettuce and cucumber into the tortillas, wrap and serve. You could of course have the vegetables in bowls for the fussy ones to pick what they like.

Shop the sales for bargains - recipes that include chicken and pork are cheaper than those with beef.
Bulk up dishes with rice, noodles and potatoes.
Seasonal vegetables, especially if local can be a really good deal. If you have a farmers market you might be shocked at some of the deals you can get on local produce that is better and cheaper than in the grocery stores.
Stay away from pricey ingredients like cheese.
Spices add a lot to bland food, if you have access to a place with bulk spices, load up and use your own jars.
