Easy, healthy recipes to help mom out?

I'd like to make dinner sometimes to help relieve some stress from my mom. I also want to improve my family's health. What are some easy, healthy recipes that have ingredients found in a non-fancy cooking household that are easy enough for a novice cooker?Easy, healthy recipes to help mom out?
Well... then I'll add my grain of pepper...





Italian bruscetta is really good and healthy if you like tomatoes that is ... it's an Italian first dish though.





You need only white bread, some garlic, tomatoes, oil from olives (probably only thing you won't have...), salt and pepper. And something to toast the bread with of course.





Cut the bread, toast it 8-15 minutes (it shouldn't burn the rest doesn't matter), add some oil on the bread while it's still hot. Not too much, just enough for it to taste interesting.





Press the garlic as small as possible, cut the tomatoes and mix both of them. Add some salt and pepper. You can put this on the bread now or you can do it before you start eating, it's your decision.





As soon as I consulted my mother I might be able to tell you more ^_^





Or not...


anyway, everything with rice is healthy too. Rice is very easy to make:





You know, 1/4 litres of rice equals about 3 portions. Give the raw rice into some high cooking utensil, add the double amount of water (for example 1/4 litres rice = 1/2 litres water). Let it cook until the water is completely gone.





Then cut and fry some vegetables. If you want to also some meat cut into small quarters (it's not that hard, I'm a novice too).





Pepper and salt and majoran (if available) for the meat, salt and pepper for the vegetables. Mix, mix. Add to rice, voila. Don't know what your familiy likes, maybe make something like creme-fresh too. It's not very healthy but it makes the meal tastier in my opinion.Easy, healthy recipes to help mom out?
You can make chicken with some red potatoes with seasonings. Take a broiler pan, place the chicken in it, add some carrots and red potatoes into wedges. Add a little water or chicken broth to the pan. Season with italian seasonings or rosemary if you have it. Bake on 350 until chicken is cooked.

In the meantime try a couple of recipes:





Heavenly Harvest Pork Roast:





1/4 cup pomagranite juice


1/4 cup sugar


1 tbsp salt


1 tbsp granulated garlic


1 tbsp steak seasoning


1 tsp black pepper


1 pork roast (4-5) pounds


2 pears, cored peeled and sliced thick


1/2 ornage peel on, sliced thick





Heat the pomagranite juice and sugar until the sugar is dissolved, pour into the bottom of the crock pot.





Mix the salt, granulated garlic, steak seasoning, and pepper. Rub all over pork, then lay the pork on top of the juice in the pan. Turn once so that it is coverd in the juice.





Cover the pork with the pears and oranges. Cover and cook on high for 6-8 hours or until tender. Serve with juice and fruit slices.

Creamy chicken enchiladas:





1 pound boneless chicken breasts diced


1 8oz package cream cheese cut into cubes


Flour or corn tortillas


1 can diced green chili peppers


ground cumin


1 or 2 can green enchilada sauce


Shredded cheese





Cook the chicken in a skillet and when the chicken is done add the cream cheese, it will melt. As the cream cheese melts add the green chilis, and a couple of good dashes of cumin. Continue to heat on low until the cream cheese has melted.





Fill a tortilla with the chicken mix, roll and place in a baking dish, Continue until the chicken mix is gone. Top with the enchilada sauce and sprinkle with cheese. Bake at 350 for about 10-15 min or until the sauce is nice and hot and the cheese is golden and bubbly.








Cook 2 pork chop with the following: 1 red bell pepper cut into 1 inch pieces, 1/2 onion chopped into medium to small pieces, and 1 apple sliced. Cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples. Cook until chops are done and the other ingredients are crisp tender. Serve with rice.

Easy Beef Tortilla Pizzas:





1 pound ground beef


1 onion chopped


1 tsp dried oregano crushed


1 tsp salt


4 large (10 inch) tortillas


4 tsp olive oil


1 medium chopped tomato, seeded and chopped


Greek or Mexican toppings listed below





Preheat oven to 400.





Cook and stir ground beef and onion in large skillet over medium heat just until beef is done. Pour of drippings and add oregano and salt stir well. Place tortillas on baking sheets and lightly brush each tortilla with oil. Bake for 3 minutes. Spread beef mix evenly over each tortilla and add desired topping Bake for another 12-15 minutes re-arranging baking sheets ½ way thru baking time.





Greek Topping:





Combine:





1 tsp dried basil crushed


½ tsp lemon pepper


4 oz crumbled feta cheese


¼ cup grated parmesan





Sprinkle over “pizzas”





Mexican Topping





1 tsp ground cilantro crushed


½ tsp crushed dried red chilies


1 cup (4oz) shredded Monterey Jack or Cheddar cheese


1/3 cup sliced ripe olives





Sprinkle over “pizzas”

Chopped Beef Stroganoff:





1 ½ pds ground beef


1 small onion chopped


1 envelope Lipton Beefy Mushroom Recipe soup mix


2 tbsp flour


2 cups water


½ cup sour cream


Hot cooked noodles





Cook and stir ground beef with onion in a large skillet over medium hi heat until onion is tender. Stir in soup mix, flour and water. Bring to a boil over hi heat, reduce heat to low and simmer 10 min. Stir in sour cream until heated thru.

Crock Pot Chicken Salsa Curry





10 chicken thighs-bone in


1 jar of your fav salsa


1/2 onion chopped


1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)


1/2 cup sour cream





Place the chicken in the crock pot. Mix the onion, curry and salsa. Pour over the chicken and cook on low for about 6-8 hours.





When the chicken is done take it out of the crock pot and put on a serving plate. Add the sour cream and mix well. Spoon the sauce over the chicken.





This would go well with rice or cous cous.





If you don't have crock pot you could also do this is a roasting pan or a casserole dish with a cover or tin foil(about 200) check it though since it may cook faster. I have only done this once in the ovena dn I think I cooked it for 3-4 hours. This recipe is easy to do smaller portions of as well.





Mexi-rice:





Use rice that is still warm.





Heat a skillet or griddle pan to a med-low heat. Add the rice and your favorite salsa, some olives, corn and ground cumin. (A great salsa to use would be the kind in the plastic tubs in the produce section, I think it's labeled as ';Fresh Salsa'; but El Paso or whatever would work as well.)





Instead of pre-made salsa make your own using roma tomatoes chopped small, red onions, chopped cilantro, minced garlic, finely chopped jalapeƱo pepper, adding some lime juice, and garlic salt. Then toss this fresh salsa in with the rice and cumin, olives, and corn.





Serve hot and I like mine with just a sprinkle of melted cheese.....yumm!!!
