Low Fat Baked Greek Tilapia

Naturally low fat, tilapia is a wonderfully mild, meaty, inexpensive fish that lends itself to all kinds of flavors. Serve this Greek-style dish with steamed vegetables and either couscous or rice--whole grain, of course.

INGREDIENTS:

* 4 Tilapia fillets

* 1 tbsp extra virgin olive oil

* Juice of 1 large lemon

* 2 tsp oregano

* 1/2 tsp paprika

* Freshly ground black pepper

PREPARATION:

Preheat oven to 400 degrees. Spray an 11-inch by 7-inch baking dish with nonstick cooking spray. In a small bowl, combine olive oil, lemon juice, oregano, paprika and ground pepper. Lay Tilapia fillets in a single layer in the baking dish.

Drizzle oil, lemon and herb mixture over the fish. Cover with foil and bake for 15-18 minutes.

Serve with steamed vegetables and whole grain couscous or rice.

Serves 4.

I don't have an actual recipe but something healthy and fairly easy, and kind of low cost -

I take a whole chicken and put it in the crock pot with a couple of cans of stewed tomatoes - undrained - you want the juice... if you want spice you can add peppers and what not... add whatever spices you like as well- salt, pepper, garlic are the standard ones I use... if I want something more italian, use italian spices, if you want something more mexican, well, you get the idea. Let it cook on low for 7-8 hours (great for starting before work and being done when you get home) and if you feel like there's not enough liquid, add chicken broth.

When the chicken is done, it is moist, tender, and very flavorful. I'll put it in corn tortillas for tacos with lettuce %26amp; tomato, or on a salad, or even by itself with some steamed veggies.

Hope that helps!

good luck!

EDIT%26gt; you might also want to try Orange Roughy - it is also a very low cal fish... I did find this recipe for a fish dish that I haven't tried, but looks pretty good - and you could probably use tilapia in it:

recipe ingredients

4 (4 oz) fish fillets such as cod or orange roughy

Nonstick spray coating

1/3 cup light mayonnaise dressing or salad dressing (such as Miracle Whip)

2 Tbsp. grated Parmesan cheese

2 Tbsp. snipped fresh chives or sliced green onion

1/2 tsp. white wine Worcestershire sauce

recipe directions

Rinse fish and pat dry with paper towels. Spray an 8脳8x2-inch baking dish with nonstick spray coating; set aside.

In a small bowl stir together mayonnaise dressing, Parmesan cheese, chives or green onion, and Worcestershire sauce. Spread Parmesan mixture over fish fillets.

Bake, uncovered, in a 450 degree F oven for 12 to 15 minutes or until fish flakes easily when tested with a fork. Makes 4 servings

I've found a lot of GREAT recipes there.
I like my Tilapia baked with lemon pepper. As far as chicken, the options are endless. Try baking with a sweet salsa. I use chicken as a substitute in tacos, stuffed green peppers, I have lots of chicken casserole recipes. Pork is great to cook with too.
First try taking some chinese green tea to help along.. WU-LONG is my favorite one so far and it s helped me lose 30 lbs and still counting..lol

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat

1 jar Spaghetti Sauce (I use Prego mushroom and garlic)

3 oz. Mozzarella Cheese, grated

2 cups Italian Bread Crumbs

2 oz. Parmesan Cheese

1/2 tsp garlic salt

1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 鈥?15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

Creamy Fettuccini Alfredo

1 鈥?8 oz. Package Philly Cream Cheese (I use the light version 鈥?1/3 less fat), cubed

戮 cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don鈥檛 use Kraft)

陆 cup margarine (I use I Can鈥檛 Believe It鈥檚 Not Butter Light)

陆 cup milk (I use 1% or 2% low fat)

8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.

Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

Serving Suggestions:
