Pan-fried chicken with cherry tomatoes

INGREDIENTS








4 chicken breast fillets


2 tablespoons olive oil


2 garlic cloves, finely chopped


陆 cup (60g) pitted black olives, halved


1 punnet (250g) cherry tomatoes, halved


green salad and crusty bread, to serve














METHOD








Pat chicken dry with paper towel. Heat 1 tablespoon of oil in a large frying pan on medium. Pan-fry chicken, turning once, for 1-2 minutes until golden on both sides. Remove and set aside.





Heat remaining oil on low. Cook garlic until aromatic but not coloured. Return chicken to pan with olives and half of tomatoes. Season well with pepper. Simmer for 10 minutes, until chicken is cooked through. Add remaining tomatoes and cook for another 3 minutes.





Arrange chicken on plates. Spoon over sauce. Serve with salad and crusty bread.








Tip: for kids who don鈥檛 like olives, cook sauce without and scatter over adult servings later.











Chicken tikka skewers





Serving size: Serves 4

INGREDIENTS








1 tablespoon finely grated ginger


2 garlic cloves, crushed


juice of 1 lemon


4 chicken breast fillets, cubed


lime halves, to serve





Herb paste


陆 cup (140g) natural yogurt


1 small green chilli, seeded


1 cup coriander


戮 cup basil


1 tablespoon garam masala








METHOD








Rub combined ginger, garlic and lemon juice into chicken. Place in a shallow bowl, cover and refrigerate for 30 minutes.





Meanwhile, make herb paste. Place all ingredients in a small food processor or blender and process until smooth. Spoon over chicken and turn to coat. Cover and refrigerate for 1 hour.





Preheat a grill on high. Thread chicken onto metal or bamboo skewers. Spread out on a baking tray lined with foil and grill for 8 minutes, turning halfway through. Serve with lime halves.





Tip: if using bamboo skewers, soak in cold water for 20 minutes before using to stop them burning.Does anyone know any good healthy low carb recipes?

I'm an art student and completely broke all the time... my current food stash consists of a loaf of bread, spices, rice and sometimes a can of beans. I've gotten sick of ramen, mac %26amp; cheese, and microwavable burritos and they are not helping my waistline. I don't have too much time to cook but I do have a full kitchen...     Add a capful of garlic and herb Mrs. Dash to a Ziploc bag, toss in chicken and mix around until seasoned through. Cook chicken in 1 tbsp. olive oil until meat flakes easily with fork. Cut or shred and top your favorite salad mixings with it. Yummy, and pretty healthy.
    Here's one I hope you will try.


    Italian Country Chicken


    6 Boneless skinless chicken breasts, quartered (about 2 1/2 lbs.)


    3 eggs beaten


    2 1/4 cups Italian breadcrumbs


    1/2 cup, plus 1 to 2 tablespoons butter, divided


    2 Tablespoons extra virgin olive oil


    1 1/2 tsp. dried Italian seasoning


    2 large green peppers , thinly sliced


    1 (7-ounce) can sliced mushrooms, drained


    2 cups Montery Jack cheese


    1 (2.8-ounce) can French's Original French Fried Onions





    1. Soak chicken breasts in beaten eggs overnight.


    2. Coat chicken pieces with breadcrumbs. In a large skillet, melt 1/2 cup butter over medium heat until golden brown. Add half the chicken and cook about 2 minutes per side. Repeat until all chicken is browned, adding 1 to 2 Tablespoons additional butter, if needed. Transfer chicken to a 13x9 inch baking pan. 4. Add olive oil and Italian seasoning to pan drippings and heat over medium heat. Add peppers and cook 12 minutes or until richly brown and caramelized, stirring frequently. Sprinkle pepper and mushrooms evenly over chicken. Deglaze the pan with some of the chicken broth and pour over all. Add remaining chicken broth. Top with cheese. Bake uncovered, 30 minutes or until golden. Serves 6.

    (stay away from sodas, drink water, V-8 Juice for your daily intake of vegetables; drink V-8 Fusion for your fruit intake.
    If you cut the breast into strips or cubes first, it will cook more quickly and evenly in the frying pan. Serving it with veggies on rice or pasta, or mixed in a salad is pretty good. If you put something on it, be careful what you use. It depends on what type of diet you are on, though. Some diets don't approve of rice or pasta.
    I use thigh fillets for this recipe. 4 chicken thigh fillets cut into half. Remove all visible fat. In a large pan add 1 tablespoon of olive oil and cook chicken in batches until brown. Pour off any excess fat. Add 1/2 cup of chicken stock and bring to boil. Reduce the heat and simmer for about 30 minutes until chicken is fully cooked. Add 1/2 of white wine and the same balsamic vinegar. Boil on high for a few minutes or until liquid thickens a bit. Season with salt and pepper. Serve on a bed af mashed sweet potato and sauted baby spinach with garlic. Drizzle the sauce all over. A winner everytime. Enjoy
    Here's how I like to cook it.





    4 boneless chicken breasts


    1 large onion


    1/2 large bell pepper


    1 clove of garlic diced


    2 T creole seasoning


    1 can chicken broth


    1 t dried parsley


    1/4 teaspoon dried sweet basil


    2 T olive oil





    Chop the onion and bellpepper. Cut the chicken into chunks, season well with the creole seasoning. Heat the olive oil in a large pot. ( I like to use cast iron, but anything will work. ) Saute the onions and bell pepper in the olive oil till tender over medium high heat. Onions will appear transparent. Add the seasoned chicken. Brown the chicken on all sides. Once the chicken is browned, add the chicken broth, parsley, basil, and garlic. Return to a boil, turn heat to low, cover and simmer for 30 to 40 mins. You can use a tablespoon of cornstarch at the end to thicken the gravy. Mix the cornstarch in a small amount of water separately and stir into the chicken. let it boil for a min or two to allow gravy to thicken.





    Serve over rice.

    ie Heres a rough recipie





    1 onion (chopped)


    1 crushed clove of garlic


    500g of chopped carrots


    1 1/2 pints of vegetable stock


    Black pepper to taste


    Chop an onion and saute in butter or olive oil with a crushed clove of garlic until soft.





    Add about 500g of chopped carrots and cook for a few minutes.





    Add 1 1/2 pints of vegetable stock, bring to the boil and simmer until the carrots are tender (about 15 - 20 mins).





    Remove from heat and season with pepper.





    Liquidise in a blender or food processor.





    Serve into bowls and swirl in some cream or yogurt and/or sprinkle with fresh chopped coriander.





    Serve with fresh crusty bread.





    Variations





    Use any combination of sweet-tasting vegetables instead of just carrots (parsnips, butternut squash, red or yellow peppers).

    Low fat leek and potato soup -








    Ingredients





    * 1 tsp Olive Oil


    * 1 Small Onion, Chopped


    * 450g Leeks, Sliced


    * 450g Potatoes, Diced


    * 500ml Semi Skimmed Milk


    * 500ml Water


    * 1 tsp Herb Cubes





    Method





    1. Heat the oil and gently fry the onion leeks and potatoes for 3 minutes





    2. Pour in the milk and 500ml water, add the herbs and season with salt and pepper.





    3. Bring to the boil, cover and simmer gently for 20 minutes.





    4. Strain the vegetables, reserving the liquid in a jug.





    5. Blend or liquidise the vegetables, then blend in the liquid.





    6. Reheat gently, adjust seasoning and serve.
    I have two awesome soups for you. One is Beef and Barley soup (loaded with meat and vegetables and wholesome barley...tastes awesome!) The other is a vegetable soup from P90X (like the info-mercials) to which I added chicken and noodles.

    Chicken Noodle Soup


    2 lbs bonele.ss skinless chicken breasts


    10 cups chicken broth


    4 red potatoes, cut into 1 inch cubes


    4 cups onions, quartered


    1 cup carrots, sliced


    3 cups celery, sliced (with tops)


    2 cups zucchini, sliced


    8 oz. tomato sauce, canned


    2 cloves garlic, minced


    1/4 bunch parsley, chopped


    1/4 bunch cilantro, chopped


    1/2 bag egg noodles, cooked according to package directions





    Cook chicken breasts in microwave until cooked through and no longer pink in center. Shred with two forks.





    In a large stockpot, combine broth, potatoes, onions, carrots, and celery. Bring to a boil. Reduce heat, and simmer until potatoes are tender, about 30 minutes.





    Add zucchini, tomato sauce, garlic, parsley, cilantro, chicken, and cooked and drained noodles. Reduce heat to medium low and cook 10-15 minutes or until zucchini is tender. Season to taste with black pepper and serve.





    (This makes a lot! You can keep leftovers in the fridge. In the leftover soup, the noodles will soak up the broth, so add more broth as needed.)
    Soup:- Mushroom %26amp; Vegetable.


    1lb Fresh mushrooms -- sliced


    2T Butter, divided


    1C Carrot -- finely chopped


    1C Celery -- finely chopped


    1C Onion -- finely chopped


    1 clove Garlic -- minced


    1 can Condensed beef broth


    2C Water


    1/4C Tomato paste


    2 t Parsley flakes


    1 Bay leaf


    1/2 t pepper


    2T Dry sherry (optional)


    Combine vegetables and butter in a large pot. Sautee for 5-7 minutes. Add remaining ingredients, and bring to a boil.


    Cover; cook on low for 30-45 minutes or until vegetables are cooked. Stir in sherry during last 15 minutes of cooking. Remove bay leaf before serving.

    This is my favourite breakfast using raw oats:





    Apple muesli





    Make a batch of wheat-free muesli wth:


    500g oats


    150g raisins


    100g mixed raw nuts or pumpkin and sunflower seeds, or a combination


    Quarter teaspoon of cinnamon.





    At breakfast time, put one-third of a cup of the muesli into a large cereal bowl with two-thirds of a cup of sweetened soya milk (it must be soya for best taste - not dairy. I don't like soya milk in most things, but in this it's fantastic).


    Add a grated apple (gala is my favourite) and half a tablespoon of lemon juice (this brings out the flavour nicely).


    Mix it up. You can add a handful of cut up strawberries or banana if you like, but that's optional.

    To the oats add any fruit, dried or fresh, nuts and seeds of your choice, sweeten to taste with honey or sugar, add yoghurt and/or milk to make your own muesli.
    For my breakfast I make a mix of 500g oats, 250g of barley flakes, rye flakes and oatmeal then add 250g of raisins sultanas and dried apricots(chopped). You can vary the additions by adding nuts, seeds etc to suit your taste. Last lot I bought cost 拢6.30 from Holland %26amp; Barretts and will last about 6 weeks. I soak my daily portion in skimmed milk in the fridge overnight so it is very low fat.
    Muesli with sugar or honey with any fresh or dried fruits with milk...muesli is raw porridge .

    I would say as far as cupcakes, the less artificial coloring the better. My friend used Cool Whip on the cupcakes instead of frosting. Still not what I would consider healthy, but better at least.





    We have a specialty grocery chain in Oregon called Wild Oats and they have a full organic bakery. So, that is where we got my daughters cake. I am sure you could find one that offers organic/reduced sugar cakes. But no worries, I would not stress too much about it, a little bit of sugar won't hurt her :).

    I like to grill sea scallops and serve them on a bed of fresh spinach. For grilling, you can just moisten them with a little olive oil to keep them from sticking and season w/sale and lemon pepper. Be careful not to overcook as they will become tough. Serve hot on a bed of fresh spinach with a light vinegarette.I need new recipes for scallops, flounder, and shelled clams please? Healthy diet conscience recipes a must?
    The clams and scallops would be great in a fiery tomato sauce. Of course, a butter and garlic sauce or cream sauce would be divine- and very bad for the waistline. I would feel confident using a jarred sauce - I really like Classico and Paul Newman - and adding onions, bell peppers, garlic, oregano, and basil (fresh basil is best), mushrooms if you like. Save the flounder for another meal and poach or broil with a little brushing of olive oil. You could make a fish/seafood stew and use all three ingredients- but I think going separate creates two better dishes.
    I've found many good recipes from this website, further more, there are all about healthy food and cooked in a simple, unique way.

    Well, grilled cheese is a perennial favorite.





    But instead of using the usual “processed, homogenized, gentrified, sterilized, paris-hiltonized cheese food product,” on your grilled cheese sammy, try slices of gruyere, raclette or brie. Brush the bread with extra-virgin olive oil and toast slowly in a heavy iron skillet. Serve with a salad of mixed greens and a cup of tomato soup.





    My favorite veggie sandwich option would be hummus with black olives, sliced pepperoncinis, mixed greens and a paper-thin slice of red onion. Give it all a dash of your house vinaigrette, or Annie’s Goddess dressing.

    I just make this myself because my mom used to make it for us and they were my favorites. Plus, I have 4 extremely picky nieces and nephews that say ';EWWW! That's gross!! I'm not eating thaaat!!!'; so this is what I found works:





    Home-made ';hamburger helper'; (it's a casserole but I tell them it's this and they go for it...:


    They liked any kind we bought in the box, so first, I cooked some pasta (egg noodles work, the little shells, and the elbow macaroni are best for kids). Then I browned some ground beef, tossed in a small can of tomato paste, and a few seasonings like chili powder or oregano--whatever you feel like along w/ salt n pepper...


    Mix the pasta into the meat and tomato paste and transfer into a casserole dish.Spread the top with shredded cheese of your choice and bake at 350 until melted--about 25 minutes.





    Also, there's a home-ade pizza kit that Chef-Boyardee makes that is EXCELLENT and a lot of fun to make with kids--let them create their own pizza but give them specific options like maybe just cheese, cheese and pepperoni (buy it it the hotdog section), etc.





    Ground beef or refried bean and cheese burritos are great, too--from scratch...Small flour tortillas, refried beans, favorite shredded cheese...You can add sour cream if they like it and ground beef w/ taco seasoning goes well for a combo burrito...





    Hot dogs and macaroni and cheese work well, too. Also, I designated each child their own ';I-get-to-pick dinner'; night. In the morning, give them 3 options that ONLY include meals from home (no takeout pizza, burgers, or subs) and then let them ';help'; on that evening. You can really benefit a lot from this--they learn what a balanced meal is, they can be creative, find new things they like, and you get to see what they like and maybe you can add variety to some things. I also went and got kids cookbooks from the library and let them pick out new things to try based on the pictures...

    I agree you need a good cookbook. You could always get some at the library, and once you find one(or more) that you like, you can look for them on Amazon.com.





    Browse around the grocery store and write down items that are cheap, that you like. Rice, pasta, potatoes, squash, whole chicken (rather than boneless pieces) are cheap. Making things from scratch is far cheaper than buying ready-made. Homemade pizza is cheaper than delivery. Pancakes, muffins, cookies, etc are cheaper to make yourself than buying a mix--and they taste better, too.

    4 chicken breast fillets


    2 tablespoons olive oil


    2 garlic cloves, finely chopped

    METHOD








    Pat chicken dry with paper towel. Heat 1 tablespoon of oil in a large frying pan on medium. Pan-fry chicken, turning once, for 1-2 minutes until golden on both sides. Remove and set aside.





    Heat remaining oil on low. Cook garlic until aromatic but not coloured. Return chicken to pan with olives and half of tomatoes. Season well with pepper. Simmer for 10 minutes, until chicken is cooked through. Add remaining tomatoes and cook for another 3 minutes.





    Arrange chicken on plates. Spoon over sauce. Serve with salad and crusty bread.








    Tip: for kids who don鈥檛 like olives, cook sauce without and scatter over adult servings later.

    Preheat a grill on high. Thread chicken onto metal or bamboo skewers. Spread out on a baking tray lined with foil and grill for 8 minutes, turning halfway through. Serve with lime halves.

    Add a capful of garlic and herb Mrs. Dash to a Ziploc bag, toss in chicken and mix around until seasoned through. Cook chicken in 1 tbsp. olive oil until meat flakes easily with fork. Cut or shred and top your favorite salad mixings with it. Yummy, and pretty healthy.

    Italian Country Chicken


    6 Boneless skinless chicken breasts, quartered (about 2 1/2 lbs.)


    3 eggs beaten


    2 1/4 cups Italian breadcrumbs


    1/2 cup, plus 1 to 2 tablespoons butter, divided


    2 Tablespoons extra virgin olive oil


    1 1/2 tsp. dried Italian seasoning


    2 large green peppers , thinly sliced


    1 (7-ounce) can sliced mushrooms, drained


    2 cups Montery Jack cheese


    1 (2.8-ounce) can French's Original French Fried Onions





    1. Soak chicken breasts in beaten eggs overnight.


    2. Coat chicken pieces with breadcrumbs. In a large skillet, melt 1/2 cup butter over medium heat until golden brown. Add half the chicken and cook about 2 minutes per side. Repeat until all chicken is browned, adding 1 to 2 Tablespoons additional butter, if needed. Transfer chicken to a 13x9 inch baking pan. 4. Add olive oil and Italian seasoning to pan drippings and heat over medium heat. Add peppers and cook 12 minutes or until richly brown and caramelized, stirring frequently. Sprinkle pepper and mushrooms evenly over chicken. Deglaze the pan with some of the chicken broth and pour over all. Add remaining chicken broth. Top with cheese. Bake uncovered, 30 minutes or until golden. Serves 6.

    (stay away from sodas, drink water, V-8 Juice for your daily intake of vegetables; drink V-8 Fusion for your fruit intake.
    If you cut the breast into strips or cubes first, it will cook more quickly and evenly in the frying pan. Serving it with veggies on rice or pasta, or mixed in a salad is pretty good. If you put something on it, be careful what you use. It depends on what type of diet you are on, though. Some diets don't approve of rice or pasta.
    I use thigh fillets for this recipe. 4 chicken thigh fillets cut into half. Remove all visible fat. In a large pan add 1 tablespoon of olive oil and cook chicken in batches until brown. Pour off any excess fat. Add 1/2 cup of chicken stock and bring to boil. Reduce the heat and simmer for about 30 minutes until chicken is fully cooked. Add 1/2 of white wine and the same balsamic vinegar. Boil on high for a few minutes or until liquid thickens a bit. Season with salt and pepper. Serve on a bed af mashed sweet potato and sauted baby spinach with garlic. Drizzle the sauce all over. A winner everytime. Enjoy
    Here's how I like to cook it.





    4 boneless chicken breasts


    1 large onion


    1/2 large bell pepper


    1 clove of garlic diced


    2 T creole seasoning


    1 can chicken broth


    1 t dried parsley


    1/4 teaspoon dried sweet basil


    2 T olive oil





    Chop the onion and bellpepper. Cut the chicken into chunks, season well with the creole seasoning. Heat the olive oil in a large pot. ( I like to use cast iron, but anything will work. ) Saute the onions and bell pepper in the olive oil till tender over medium high heat. Onions will appear transparent. Add the seasoned chicken. Brown the chicken on all sides. Once the chicken is browned, add the chicken broth, parsley, basil, and garlic. Return to a boil, turn heat to low, cover and simmer for 30 to 40 mins. You can use a tablespoon of cornstarch at the end to thicken the gravy. Mix the cornstarch in a small amount of water separately and stir into the chicken. let it boil for a min or two to allow gravy to thicken.





    Serve over rice.

    This is my favourite breakfast using raw oats:





    Apple muesli





    Make a batch of wheat-free muesli wth:


    500g oats


    150g raisins


    100g mixed raw nuts or pumpkin and sunflower seeds, or a combination


    Quarter teaspoon of cinnamon.





    At breakfast time, put one-third of a cup of the muesli into a large cereal bowl with two-thirds of a cup of sweetened soya milk (it must be soya for best taste - not dairy. I don't like soya milk in most things, but in this it's fantastic).


    Add a grated apple (gala is my favourite) and half a tablespoon of lemon juice (this brings out the flavour nicely).


    Mix it up. You can add a handful of cut up strawberries or banana if you like, but that's optional.

    For my breakfast I make a mix of 500g oats, 250g of barley flakes, rye flakes and oatmeal then add 250g of raisins sultanas and dried apricots(chopped). You can vary the additions by adding nuts, seeds etc to suit your taste. Last lot I bought cost 拢6.30 from Holland %26amp; Barretts and will last about 6 weeks. I soak my daily portion in skimmed milk in the fridge overnight so it is very low fat.
    Muesli with sugar or honey with any fresh or dried fruits with milk...muesli is raw porridge .

    Well, grilled cheese is a perennial favorite.





    But instead of using the usual “processed, homogenized, gentrified, sterilized, paris-hiltonized cheese food product,” on your grilled cheese sammy, try slices of gruyere, raclette or brie. Brush the bread with extra-virgin olive oil and toast slowly in a heavy iron skillet. Serve with a salad of mixed greens and a cup of tomato soup.





    My favorite veggie sandwich option would be hummus with black olives, sliced pepperoncinis, mixed greens and a paper-thin slice of red onion. Give it all a dash of your house vinaigrette, or Annie’s Goddess dressing.





    I haven’t made the grilled cheese sandwich detailed in the link below. But, it sounds like something that I would do – make bread so I could make a sandwich. I haven’t gone so far as to make cheese so I can make a sandwich, so, maybe I still retain a shred of sanity.

    Sautee portabella mushrooms in non-stick spray with your favorite seasoning and make a ';burger'; type sandwich.


    Make egg salad with Miracle Whip Free and a dab of yellow mustard--especially good on toast.


    Turkey and chicken are good with the Free Miracle Whip too.

    I like to grill sea scallops and serve them on a bed of fresh spinach. For grilling, you can just moisten them with a little olive oil to keep them from sticking and season w/sale and lemon pepper. Be careful not to overcook as they will become tough.     The clams and scallops would be great in a fiery tomato sauce. Of course, a butter and garlic sauce or cream sauce would be divine- and very bad for the waistline. I would feel confident using a jarred sauce - I really like Classico and Paul Newman - and adding onions, bell peppers, garlic, oregano, and basil (fresh basil is best), mushrooms if you like. Save the flounder for another meal and poach or broil with a little brushing of olive oil. You could make a fish/seafood stew and use all three ingredients- but I think going separate creates two better dishes.
    I've found many good recipes from this website, further more, there are all about healthy food and cooked in a simple, unique way.

    any soup ie Carrot soup, potato and leek soup and of them are healthy and low fat.


    ie Heres a rough recipie





    1 onion (chopped)


    1 crushed clove of garlic


    500g of chopped carrots


    1 1/2 pints of vegetable stock


    Black pepper to taste


    Chop an onion and saute in butter or olive oil with a crushed clove of garlic until soft.





    Add about 500g of chopped carrots and cook for a few minutes.





    Add 1 1/2 pints of vegetable stock, bring to the boil and simmer until the carrots are tender (about 15 - 20 mins).





    Remove from heat and season with pepper.





    Liquidise in a blender or food processor.





    Serve into bowls and swirl in some cream or yogurt and/or sprinkle with fresh chopped coriander.





    Serve with fresh crusty bread.





    Variations





    Use any combination of sweet-tasting vegetables instead of just carrots (parsnips, butternut squash, red or yellow peppers).

    Ingredients





    * 1 tsp Olive Oil


    * 1 Small Onion, Chopped


    * 450g Leeks, Sliced


    * 450g Potatoes, Diced


    * 500ml Semi Skimmed Milk


    * 500ml Water


    * 1 tsp Herb Cubes





    Method





    1. Heat the oil and gently fry the onion leeks and potatoes for 3 minutes





    2. Pour in the milk and 500ml water, add the herbs and season with salt and pepper.





    3. Bring to the boil, cover and simmer gently for 20 minutes.





    4. Strain the vegetables, reserving the liquid in a jug.





    5. Blend or liquidise the vegetables, then blend in the liquid.





    6. Reheat gently, adjust seasoning and serve.
    I have two awesome soups for you. One is Beef and Barley soup (loaded with meat and vegetables and wholesome barley...tastes awesome!) The other is a vegetable soup from P90X (like the info-mercials) to which I added chicken and noodles.

    Chicken Noodle Soup


    2 lbs bonele.ss skinless chicken breasts


    10 cups chicken broth


    4 red potatoes, cut into 1 inch cubes


    4 cups onions, quartered


    1 cup carrots, sliced


    3 cups celery, sliced (with tops)


    2 cups zucchini, sliced


    8 oz. tomato sauce, canned


    2 cloves garlic, minced


    1/4 bunch parsley, chopped


    1/4 bunch cilantro, chopped


    1/2 bag egg noodles, cooked according to package directions





    Cook chicken breasts in microwave until cooked through and no longer pink in center. Shred with two forks.





    In a large stockpot, combine broth, potatoes, onions, carrots, and celery. Bring to a boil. Reduce heat, and simmer until potatoes are tender, about 30 minutes.





    Add zucchini, tomato sauce, garlic, parsley, cilantro, chicken, and cooked and drained noodles. Reduce heat to medium low and cook 10-15 minutes or until zucchini is tender. Season to taste with black pepper and serve.





    (This makes a lot! You can keep leftovers in the fridge. In the leftover soup, the noodles will soak up the broth, so add more broth as needed.)
    Soup:- Mushroom %26amp; Vegetable.


    1lb Fresh mushrooms -- sliced


    2T Butter, divided


    1C Carrot -- finely chopped


    1C Celery -- finely chopped


    1C Onion -- finely chopped


    1 clove Garlic -- minced


    1 can Condensed beef broth


    2C Water


    1/4C Tomato paste


    2 t Parsley flakes


    1 Bay leaf


    1/2 t pepper


    2T Dry sherry (optional)


    Combine vegetables and butter in a large pot. Sautee for 5-7 minutes. Add remaining ingredients, and bring to a boil.


    Cover; cook on low for 30-45 minutes or until vegetables are cooked. Stir in sherry during last 15 minutes of cooking. Remove bay leaf before serving.

    I would say as far as cupcakes, the less artificial coloring the better. My friend used Cool Whip on the cupcakes instead of frosting. Still not what I would consider healthy, but better at least.





    We have a specialty grocery chain in Oregon called Wild Oats and they have a full organic bakery. So, that is where we got my daughters cake. I am sure you could find one that offers organic/reduced sugar cakes. But no worries, I would not stress too much about it, a little bit of sugar won't hurt her :).
    September 13 is my birthday! I was be 24 though lol.

    I just make this myself because my mom used to make it for us and they were my favorites. Plus, I have 4 extremely picky nieces and nephews that say ';EWWW! That's gross!! I'm not eating thaaat!!!'; so this is what I found works:





    Home-made ';hamburger helper'; (it's a casserole but I tell them it's this and they go for it...:


    They liked any kind we bought in the box, so first, I cooked some pasta (egg noodles work, the little shells, and the elbow macaroni are best for kids). Then I browned some ground beef, tossed in a small can of tomato paste, and a few seasonings like chili powder or oregano--whatever you feel like along w/ salt n pepper...


    Mix the pasta into the meat and tomato paste and transfer into a casserole dish.Spread the top with shredded cheese of your choice and bake at 350 until melted--about 25 minutes.





    Also, there's a home-ade pizza kit that Chef-Boyardee makes that is EXCELLENT and a lot of fun to make with kids--let them create their own pizza but give them specific options like maybe just cheese, cheese and pepperoni (buy it it the hotdog section), etc.





    Ground beef or refried bean and cheese burritos are great, too--from scratch...Small flour tortillas, refried beans, favorite shredded cheese...You can add sour cream if they like it and ground beef w/ taco seasoning goes well for a combo burrito...





    Hot dogs and macaroni and cheese work well, too. Also, I designated each child their own ';I-get-to-pick dinner'; night. In the morning, give them 3 options that ONLY include meals from home (no takeout pizza, burgers, or subs) and then let them ';help'; on that evening. You can really benefit a lot from this--they learn what a balanced meal is, they can be creative, find new things they like, and you get to see what they like and maybe you can add variety to some things. I also went and got kids cookbooks from the library and let them pick out new things to try based on the pictures...

    I agree you need a good cookbook. You could always get some at the library, and once you find one(or more) that you like, you can look for them on Amazon.com.





    Browse around the grocery store and write down items that are cheap, that you like. Rice, pasta, potatoes, squash, whole chicken (rather than boneless pieces) are cheap. Making things from scratch is far cheaper than buying ready-made. Homemade pizza is cheaper than delivery. Pancakes, muffins, cookies, etc are cheaper to make yourself than buying a mix--and they taste better, too.

    Mac %26amp; Cheese isn't very hard from scratch. I commend you for wanting to make the real thing. The stuff in the blue box is very very salty, and contains lots of preservatives. The cheese is so processed (that magic orange powder!) that it can't hardly be called cheese any more.





    Easy Mac %26amp; Cheese





    Boil up a pound of Mac. Drain.





    2 tablespoons butter


    2 tablespoons flour


    2 cups hot milk


    12 oz shredded cheese (mild cheddar for kids, sharp for me)


    salt


    pepper





    Melt the butter over medium-low heat. Once it melts, allow it to bubble until it stops -- this gets all the water out of the butter.





    Add the flour and whisk and continue to cook the paste until it starts to turn golden, about 2 minutes. Add the hot milk in splashes and whisk continuously. Incorporate all the milk and whisk until you have a white sauce. Add a dash of pepper and salt.





    Add the shredded cheese 1/3 at a a time, whisking all the way.





    Pour the finished sauce onto the mac. You can serve it like this, or...





    For an extra treat, put it in a casserole, cover with breadcrumbs or cracker crumbs, dot with butter, and top with more cheese. Put it under the broiler until golden brown.





    Enjoy the toddler years!
    Homemade Mac and Cheese





    Ingredients-


    8 ounces macaroni


    2 cups shredded sharp Cheddar cheese


    1/2 cup grated Parmesan cheese


    3 cups milk


    1/4 cup butter


    2 1/2 tablespoons all-purpose flour


    2 tablespoons butter


    1/2 cup bread crumbs


    1 pinch paprika








    Preparation-


    Cook macaroni according to the package directions. Drain.


    In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.


    Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.


    Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

    When you can't make your own, try Annies Natural Mac and Cheese. Its lower in sodium, uses organic durham flour, and is great tasting!

    The poster above had a good recipe, but use whole wheat pasta and substitute some of the cheese for squash puree. It sounds gross, but I do this and my kids don't notice, I swear!
    I make homemade almost exactly as the previous poster does. One exception - I use the microwave. Stirring every minute at first, and then every 30 seconds. It doesn't save time, but it prevents scorching on the bottom of the pan, and if your toddler calls you away, it won't burn. It will just sit in the microwave until you return. Just make sure to set the timer to the appropriate interval.





    Now that the kids are older, I add broccoli and bacon, or sausage meat to it, too.

    My vet told me to feed my dogs ';Royal Canin Dry';. They love it and it has all the nutrients they need. I have been feeding that to mine, for quite a while now, and they are healthier than ever, and have had no health problems.
    I go with Nutro Natural Choice. It's got good ingredients and is relatively cheap.
    Don't go with Science Diet - they just have a recall on their DRY cat food! - so will it now include more dry foods?
    Purina brand of dog food is a safe brand........!
    Mix in a food processer or chop up really really good with a knife:


    2 cans of diced potatoes and 1 can of red salmon


    Include the bone and skin of the salmon.


    Check with your vet before changing your dog's food.


    But a good homemade dog food needs to be


    2 parts starch, (potatoes) and


    1 part protein, (salmon)

    Science Diet is a good brand to go with. You can also do homemade stuff with protein, like chicken or eggs and some rice and veggies.
