A very simple dish I love....

New Potatoes(the little red ones)-cut up into bite size pieces

One yellow onion-cut up the same way

One Green or Yellow bell pepper

A little bit of Extra Virgin Olive Oil

And any type of spices you like.

Cut up the potatoes, onion, and bell pepper, place on cookie sheet, sprinkle with a little extra virgin olive oil and your spices, then bake in the oven at about 450 degrees for about 20-30 minutes

Its great...healty, and you still get a little bit of carbs...YUM!
I love to make lentils and rice. You throw some lentils and rice (shocking I know!) in a pot. Add 1 part water to 1 part lentils, and 2 parts water to 1 part rice, and a tablespoon of butter. Add salt, pepper, cumin, turmeric, ginger, cayene pepper (if desired) to taste. Bring to a boil, then reduce heat to low, cover and simmer for 45 minutes. Do NOT remove the cover for at least 45 minutes.
Well you can cook a lot of stuff with only salt and pepper. Chicken, turkey etc, salt, pepper and cook. Well and some olive oil.

I have no clue how basic you want though so I can't guess beyond that.

I suggest buying quality goods. Good quality pasta sauce for instance that's high on taste, low on sugar and sodium, then you use that for pastas or chicken parmesan or something. Quality means good flavour, you'll find if you use foods that are good in flavour to begin with that you don't have to add as much.

An example is fish. If you have some good quality fresh fish you can easily cook it with simple ingredients and come out with something healthy and tasty. Same with chicken or turkey. But if you buy lower quality you may find it shrink(always annoying with chicken) and become rubbery, and it may taste not that great, meaning you have to cover up the natural flavour of the food to begin with.

All that said, another easy tip is to use some oil and vinegar salad dressings(vinaigrettes I think they're called) and use that for marinating. Gives it a punch of flavour and it's easy to make.

Also get to know your spices, they're the saving grace for people wanting to eat healthy. Just try buying the basics, basil, thyme, parsley, and work up. Usually recipes that involve spices will be lower in calories because they don't rely on sugar for flavour.
*Hummus on a piece of wheat pita bread with sprouts tomatoes.

* Salad - Romaine lettuce, grape tomatoes, almonds, walnuts, pine nuts, mandarin orange segments and a fat free ranch dressing or spritzer.
