In need of healthy, quick recipes?

We usually come home quite late from work and have been trying to put together a binder full of recipes for dinner that we can use.





We are looking for meals that are


1. Very quick to make


2. Mostly vegetarian, little to no meat


3. Very healthy, low cholesterol, low fat, low sodium, etc





Would anyone have some suggestions we could try out.

Biscuits for Two





Prep Time:5 min


Start to Finish:15 min


Makes:5 biscuits





1 1/4cups Original Bisquick庐 mix


1/2cup milk





1.Heat oven to 450潞F. Stir ingredients until soft dough forms.


2.Turn onto surface dusted with Bisquick mix. Knead 10 times. Roll 1/2 inch thick. Cut with 2 1/2-inch cutter. Place on ungreased cookie sheet.


3.Bake 8 to 10 minutes or until golden brown.


High Altitude (3500-6500 ft) No changes.

Gazpacho Pasta Salad





Prep Time:20 min


Start to Finish:35 min


Makes:14 servings





Salad


1package (16 oz) bow-tie (farfalle) pasta


2large tomatoes, seeded, coarsely chopped (2 cups)


1large cucumber, coarsely chopped (1 1/2 cups)


1small red bell pepper, coarsely chopped (1/2 cup)


1small yellow bell pepper, coarsely chopped (1/2 cup)


8medium green onions, sliced (1/2 cup)


1green Anaheim chile, seeded, chopped


1can (2 1/4 oz) sliced ripe olives, drained


1/2cup finely chopped fresh cilantro


Tomato-Lime Vinaigrette


1/2cup tomato juice


1/4cup olive or vegetable oil


1/4cup lime juice


1/2teaspoon salt


1/4teaspoon pepper


2cloves garlic, finely chopped





1.Cook and drain pasta as directed on package. Rinse with cold water; drain.


2.In large bowl, mix pasta and all remaining salad ingredients.


3.In small bowl, mix all vinaigrette ingredients until well blended. Pour over salad; toss to mix.

Shrimp Salad Italiano (lighter recipe)





Prep Time:10 min


Start to Finish:10 min


Makes:4 servings





1package (14 ounces) frozen precooked salad tortellini


3/4pound cooked peeled deveined medium shrimp, thawed if frozen


1/4cup sliced ripe olives


1/4cup chopped red onion


1/3cup fat-free Italian dressing





1.Thaw tortellini as directed on package.


2.Toss tortellini and remaining ingredients until coated with dressing. Refrigerate before serving if desired.

- alternative entre: veggie burger with variety of high quality condiments served a la cart: horseradish and jalapeno mustard, Heinz tobasco ketchup, etc.


- orange for dessert
