What are some recipes that are healthy and affordable recipes on a college student's budget.?

I've been having health problems, as of late, and know that eating healthier will help me. So I'm cutting out all fast food, red meat, and pork (really because I don't like pork). What else do you suggest? What are some links to tasty and cheap health recipes? I eventually want to make the move to vegan, so any advice there would be most appreciated. Make chili with ground turkey. Here's how I make it.





Ingredients


1 lg. can crushed tomato


2-3 cans dark rd kidney beans


1 med. onion (chopped)


1/4-1/2 cup green pepper (chopped)


2 cloves fresh, crushed garlic


1 tbsp. cumin


chili powder (3-4 tbsp)


cayenne pepper (to taste)


1 lb gr. turkey


canola or olive oil





Be generous with the chili powder.





Brown ground turkey in a fry pan with a few tablespoons of oil





In a large pot mix all ingredients and the browned ground turkey. Add water if necessary. Cover and simmer for about 1-1/2 - 2 hours. This works very well in a slow cooker. If using a slow cooker, cook for 3-4 hours.





Another VERY simple, easy %26amp; healthy recipe is a chicken breast dish with zucchini, peppers %26amp; onions with salsa. It's about as simple as it gets. It's for 2 meals.





2 boneless chicken breasts


1 jar of your favorite salsa


1 zucchini (sliced and quartered)


green pepper strips


1 med. sliced onion





In a small baking dish, place the chicken breasts. Then add the zucchini, onions %26amp; peppers and salsa. Bake at 350 deg. F. until chicken is tender (about 45 mins.)





Shrimp with whole wheat angel hair pasta in a garlic sauce. Another easy dish.





- Shrimp (I usually buy the raw frozen easy-peel shrimp)


- fresh crushed garlic (about 2 cloves)


- white wine (I love dry vermouth for this dish and many fish dishes)


- tarragon and your choice of other dried herbs)


- fresh lemon wedges


- whole wheat (not whole wheat blend) angel hair pasta


- olive oils


- good quality fresh romano or parmesan (never in those cardboard containers!!!)





In a large fry pan, saute shrimp with olive oil and herb.. not too long. Add fresh garlic and about 1/4 cup white wine and simmer another 30 seconds or so, and remove from heat.





Best when serve with freshly grated Romano or parmesan cheese.





Cook pasta. Put pan with shrimp back on med-med/low heat. Add pasta and toss well. Add a little more olive oil if necessary.





- Mac %26amp; cheese is not a healthy dish... delicious, but definitely very few health benefits. There are healthier way to get dairy.


- Unless you're making the soup yourself, most soups are VERY high in sodium and contain other preservatives %26amp; chemicals we can do without.What are some recipes that are healthy and affordable recipes on a college student's budget.?
soups are really cheap %26amp; nutritious - also you can make loads and freeze portions





stir fry is very quick, cheap %26amp; easy to make


- you can get bags of stir fry veg from your supermarket - all you need to do is cook it off with your meat (or tofu if veggie) and sauce. Cook the rice seperately as per instructions on the bag (brown rice is healthiest)





pasta is also very cheap (I use wholewheat pasta - much nicer in my opinion %26amp; healthier too) - maybe you could look up somerecipes for veggie pasta bakes?





....have to say, I love roasted med. veg served with couscous - throw in some chickpeas for extra nutrition

Get a George Forman grill at Walmart for like $20. I had one in college and you can make chicken breasts, burgers (turkey or salmon burgers if you're trying to be healthy), steak (if you decide to eat red meat again). i used to make a bunch of chicken breasts then put them in the fridge and throw them on salads all week. Also cereal for meals is a good alternative to meat.
I want to be a vegan but my wife won't let me the ';Beeatch';.


Anyway you can still eat healthily whilst enjoying meat, red %26amp; white. eat plenty of fresh fish too. Chicken is versatile and depending on what part you favor, i.e breast(white meat) or the leg and thigh (brown meat). the later carries more calories mind. don't know where you are but just type in cheap recipies in Google there are loads of sites. too many to list here.

i would start with spaghetti and add extra veggies to your sauce, vegiie sandwiches, baked potatoes, rice with veggies.. stuff like that. check www.allrecipes.com too, someone gave me that website and i have found some cool stuff, there is a link to veg/vegan meals too! good luck and much good health! :)

Pasta with a tomato based sauce is really nice and can be heated up. jacket potatoes with various fillings are also a real winter warmer and full of fibre Try to make sure you have plenty of fruit and veg to build up your health!
