Any good, healthy baking recipes?

I love sweets, and I love to bake but I always end up feeling like I've overindulged. I need some tasty recipes that I can feel good about eating, too.Any good, healthy baking recipes?
Quinoa Pudding


Ingredients:


A


2 1/2 cups cooked quinoa





B


1 can coconut milk


1/2 cup maple syrup


1 tsp cinnamon


1/2 tsp cardamom


1/2 tsp nutmeg


1/8 tsp ground cloves


1/2 cup raisins


1 tsp vanilla





C


1/2 box silken tofu


1 cup soy milk





D


1/2 cup toasted almonds


1 tsp fine lemon zest


Directions:


1. Bring all ingredients in section B to a simmer in a large pot





2. Add the cooked quinoa





3. Blend ingredients in sections C, then whisk into the simmering mix





4. Cook until thick (approx 20 minutes). Let chill for 1 hour. Top with almonds and zests.Any good, healthy baking recipes?

Chocolate Caramel Cheesecake


INGREDIENTS


2 cups graham cracker crumbs


1/2 cup cocoa powder


1 cup sugar


3/4 cup melted butter





2 cups sugar


3/4 cup water


1 1/2 cups heavy cream


8 ounces bittersweet chocolate, coarsely chopped


3/4 cup sour cream


3 (8 ounce) packages cream cheese


4 eggs


1 tablespoon vanilla extract


DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly coat a 10-inch springform pan with nonstick cooking spray.


Combine the graham cracker crumbs with the cocoa powder and 1 cup sugar. Toss with melted butter. Press into the bottom and 1 to 2-inches up the sides of the prepared springform pan.


Bring 2 cups sugar and the water to a boil in a large, heavy-bottomed pot. Reduce heat to medium-low, and continue to cook without stirring until the mixture has turned a deep, golden color, 30 to 45 minutes. Remove from the heat, and carefully pour in the heavy cream (the mixture will bubble vigorously). Return the caramel to the stove over low heat, and stir until completely liquefied. Stir in the chocolate until melted, then stir in the sour cream. Remove from heat and set aside.


Beat the cream cheese until fluffy in an electric mixer. Add caramel mixture, and blend well, scraping the sides of the bowl occasionally. Add eggs, one at a time, scraping the bowl after each addition. Add the vanilla with the last egg. Mix until well incorporated, then pour mixture into prepared pan.


Place pan into a hot water bath with the water coming half way up the sides of the springform pan. Bake in the center of the preheated oven until the center has set, about 1 hour 15 minutes. The cheesecake is done when the middle 3 or 4 inches are still a little wobbly. Chill completely before serving





Caramel Popcorn





INGREDIENTS


1 cup butter


2 cups brown sugar


1/2 cup corn syrup


1 teaspoon salt


1/2 teaspoon baking soda


1 teaspoon vanilla extract


5 quarts popped popcorn


DIRECTIONS


Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.


In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.


Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces

use soy milk


and add coco to the mixture


and use sugar free candy bars into the pancakes when its ready for it when u cook it in the pan and the one side is almost done break the herseheys sugar free cand bars and put them in the pancakes flip to seal and ur good





how about sugar free pilsbury chocolate chip cookies just tear and place on pan and heat and serve





or use sugar free fat free chocolate or vanilla pudding that u cook and in a oreo prepared crust put the pudding on top of it and then use coolwhip or whip cream when serving time comes





buy fat free 94% pop corn


or the healthy jolly olly pop corn packets


add tabasco sauce for a kick





use sweet potatos and slice them into strips drizzle olive oil over them and season with salt parsley and pepper and throw into oven for french fries





make sweet potato pie
