What are some healthy kid friendly recipes for a picky eater?

my 2 year old daughter Brenna is just getting to the ';i don't like that'; stage- you know, when they say they don't like something and refuse to eat it (when really they loved it before). all she ';likes'; now is pb%26amp;j, macoroni, fried chicken, pizza, and cheeseburgers- obviously not healthy. thanks in advanced!What are some healthy kid friendly recipes for a picky eater?
Pizza is ok for her, nothing wrong with that. Nothing wrong with cheeseburgers either. Actually what she is eating is fine for her, I would just give her chicken nuggets that you can get in the freezer section of your store rather than fried chicken since you would bake the nuggets. Our 2 year old daughter is going through this too. She loves the Quaker instant oatmeal in Blueberry or Cinnamon bun which is VERY healthy. You can also try some cooked carrots with a little butter or orange marmalade jam on them to make them extra sweet. This is so typical at this age to be picky but is just a phase, not to worry.What are some healthy kid friendly recipes for a picky eater?

Applesauce Bars


录 cup margarine


戮 cup packed brown sugar


戮 cup unsweetened applesauce


1 cup all purpose flour or whole wheat flour


录 cup raisins


陆 tsp soda


陆 tsp cinnamon


1/8 tsp nutmeg


1/8 tsp cloves


录 cup chopped nuts


Microwave (high) margarine in glass mixing bowl 30 seconds 20 seconds or until margarine is softened. Blend in brown sugar, beat in applesauce. Stir in flour, soda, cinnamon, nutmeg and cloves. Mix in nuts and raisins. Grease 8 inch square glass baking dish on the bottom only. Spread batter in dish. Microwave (high) uncovered, 8 minutes or until no longer doughy, rotating dish twice. Cool cut into bars.
3 large russet potatoes, scrubbed


1 Tbs olive oil


1 medium onion, chopped


1/2 lb lean ground beef


1 tsp Worcestershie sauce


1/4 cup tomato paste


3 Tbsp parmesan cheese


1/2 tsp salt, plus 1/4 tsp Pepper, to taste


2 Tbsp unsalted butter


2 Tbsp plain low-fat yogurt


6 slices American cheese





1. Preheat oven to 450掳F. Prick potatoes several times with a fork and place them directly on oven rack. Bake until tender, 50 to 60 minutes.


2. While potatoes are baking, heat the oil in a deep skillet over medium heat. Add the onion and cook until slightly translucent, about 10 minutes. Add the beef, stirring to break it up, and cook about 5 minutes, until browned.


3. Stir in the Worcestershire sauce, tomato paste, parmesan cheese, 1/2 tsp salt, and pepper to taste. Cook another 5 minutes.


4. Remove potatoes from oven and set aside until cool enough to handle. Cut them in half lengthwise and carefully scoop out the flesh into a mixing bowl, leaving some behind to keep the shells intact. Mash potatoes lightly with a fork, then mix in the butter, yogurt, and 1/4 tsp salt. Set aside.


5. Fill each potato shell with about 2 Tbsp of the cooked hamburger mixture, then top with about 3 Tbsp of the potato mixture, mounding slightly. Top with a slice of American cheese and bake until melted, about 5 minutes. Serve immediately.

Quickie-side suggestion: Toss a bag of chopped romaine lettuce with 6 Tbsp olive oil, 2 Tbsp lemon juice, and parmesan cheese. Salad doesn't get much easier!





Ideas for picky eaters: This is a way fun dish to eat, so you may luck out. If not, just deconstruct it: Put a little mashed potato and beef on the side, and let him eat his cheese straight out of the wrapper.
