Do you have any healthy, delicious banana recipes?

Some of my family and friends are coming over this week for an exotic, tropical food party, and I already have some coconut recipes (if you have some coconut recipes you don't mind sharing let me know, too) and I really need some banana recipes. I already have a yummy recipe for creamy banana pudding. Something unusual would be great. Thanks!





And, it HAS to be healthy and as low-fat as possible (even though bananas are kinda fattening).

Green Banana and Potato Salad Ingredients:





2-1/2 lbs. red-skin or Yukon Gold potatoes


3 lbs. greenish-yellow bananas (7 or 8)


2 medium onions, sliced


1/2 cup Spanish capers, drained


1 cup pimiento-stuffed Spanish olives


3/4 cup extra-virgin olive oil


1/2 cup white vinegar


1 Tbs. Dijon mustard


2-1/2 tsp. salt


1 tsp. milled black pepper





Preparation:





Peel potatoes and cut into 1-inch cubes. Cook in boiling, salted water until firm-tender, about 8 to 10 minutes. Peel and slice bananas into 1-inch pieces. Add bananas to the potato pot and boil 1 minute more. Drain. In a large serving bowl, layer the warm bananas and potatoes with sliced onions, capers and olives, which have been cut in half crosswise. Whisk together the oil, vinegar, mustard, salt and pepper, then pour dressing over the salad. Cover with plastic wrap and refrigerate at least 2 hours.





Yield: 10 servings


Preparation time: 35 minutes

Oatmeal Banana Nut Bread





1/2 cup shortening


3/4 cup white sugar


2 eggs


1 cup mashed bananas


1 teaspoon vanilla extract


1 1/2 cups all-purpose flour


1/2 teaspoon baking soda


1/2 teaspoon salt


1/2 cup quick cooking oats


1/2 cup chopped coconut





Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.


In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.


In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.


Bake in preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
If you haven't purchased all the bananas as yet, fried plantains (Tostones) are delish %26amp; would fit in with a tropical theme.

One of my very favorites is chocolate covered bananas (rolled in chopped nuts) on a stick -- frozen. But, they are yummy just dipped in chocolate.





Chocolate Covered Frozen Banana Pops


5 bananas


8 popsicle sticks


3 cups good quality chocolate bar


3 tablespoons butter, cut up





Toppings:


Chopped nuts


Toasted coconut


Colored sprinkles


Granola





Peel and cut the bananas in half crosswise, so that you have 8 pieces. Place peeled bananas on sticks. Line a cookie sheet with waxed paper. Place bananas on the cookie sheet in the freezer, keep them in there as long as possible, at least 10 minutes. Heat chocolate bits with butter in a double boiler over low heat until the chocolate melts and butter is incorporated. Dip the chilled bananas in chocolate and roll with your favorite topping. Chill or freeze until ready to serve.
