Any good healthy recipes?

i need some fast easy recipes that r healthy. ones that dont have all those weird things in there that no one has ever heard of, basically ones with ingredients that ud find in a normal kitchen. it can be ones u use at home or ones off a website. just anything.Any good healthy recipes?

Chicken soup with real chicken and your own veggies


Spanish foods are pretty healthy, the hard part is making the ';chismol'; As follows:


Diced tomatoes ( 1 tomatoe)


Thinly sliced then diced onion (a quarter onion)


Chopped green pepper (half of 1)


Cilantro, a hand full w/o the stems thinly chopped (approx 1/8 of the bunch)


Mixed in bowl add a pinch of salt and pepper and half a lemon.


Add more salt pepper lemon to taste





Do something like boiling the chicken or grilling the chicken





Make rice





Buy El Paso or whatever taco dip and guacamole
SALMON FILLETS OR STEAKS::- BAKED


Salmon fillets, any portion size, boned and skinned


Onion powder, to taste be generous


Garlic powder, to taste be generous


Dried dill, to taste be generous


Mrs. Dash, to taste be generous


Mayonnaise


Paprika


Wash and dry fillets. Spread thin coat of mayonnaise over salmon. Spray Pam or similar product over Pyrex or tin foil pan or rectangular pan (depending on amount and size of portions).


Sprinkle seasonings over fish ending with paprika. Bake in 375 degree oven for 10 to 20 minutes or until fish flakes easily.
I like to make fish tacos (especially good and light for the summer months)


start with a steaky white fish (mahi mahi is my fav) 1-2lbs


put it in a skillet and drizzle a tsp of olive oil, squeeze half a lime over and sprinkle salt pepper and whatever other spices you like on the fish (i use garlic powder) then cook until fish is falling apart and is cooked thoroughly. 10-15 minutes tops.





get some tortillas (wheat is healtier) and some cole slaw mix (just pick up a cole slaw kit at the store... or you can also use baby spinach) and some white cheese and either green or red salsa.... also avocados if you like them.





dish up some fish into the tortillas and fill with whatever toppings you like. they are delicious, i promise... i even got my picky little brother to eat them... cabbage and all.

Greek Style Garlic Chicken Breast


INGREDIENTS





* 4 chicken breast halves


* 1 cup extra virgin olive oil


* 1 lemon, juiced


* 2 teaspoons crushed garlic


* 1 teaspoon salt


* 1 1/2 teaspoons black pepper


* 1/3 teaspoon paprika





1. Cut 3 slits in each chicken breast to allow marinade to penetrate. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, pepper, and paprika for about 30 seconds. Place chicken in a large bowl, and pour marinade over. Using your hands, work marinade into chicken. Cover, and refrigerate overnight.


2. Preheat grill for medium heat, and lightly oil grate.


3. Cook chicken on grill until meat is no longer pink and juices run clear.

Spinach Stuffed Chicken





NGREDIENTS





* 4 chicken breasts


* 1 cup mayonnaise


* 1 cup crumbled feta cheese


* 2 cloves garlic, chopped


* 1 (6 ounce) package frozen chopped spinach, thawed and drained


* 4 slices bacon





DIRECTIONS





1. In a medium bowl, mix mayonnaise, spinach, feta cheese, and garlic until well blended. Set aside.


2. Carefully butterfly chicken breasts, making sure not to cut all the way through. Spoon spinach mixture into chicken breasts. Wrap each with a piece of bacon, and secure with a toothpick. Place in shallow baking dish. Cover.


3. Bake at 375 degrees F (190 degrees C) for 1 hour, or until chicken is no longer pink.

Savory Stuffed Chicken Breast with Plum Glaze





INGREDIENTS





* 1 tablespoon olive oil


* 2 (6 ounce) skinless, boneless chicken breast halves


* Salt and pepper to taste


* 2 pieces cornbread, crumbled


* 2 slices cooked bacon, crumbled


* 2 tablespoons minced celery


* 2 tablespoons minced onion


* 2 tablespoons butter, melted


* 1/4 cup chicken stock


* 1/3 cup chicken stock


* 1/3 cup plum jam





DIRECTIONS





1. Preheat oven to 350 degrees F (175 degrees C).





2. Heat olive oil in a skillet over high heat. Using a paring knife, cut a pocket into the side of each breast. Place into skillet and sear until lightly browned on both sides, but not cooked through. Set aside.





3. Combine cornbread, bacon, celery, onion, butter, and 1/4 cup chicken stock; mix until well combined. Stuff each breast with cornbread mixture.





4. Bake in preheated oven for 25 minutes.





5. While the chicken is baking, bring 1/3 cup chicken stock to a simmer. Whisk in plum jam, and simmer over medium-low heat until most of the chicken stock has evaporated.





6. Pour plum glaze over chicken breasts, and cook for an additional 10 minutes and the center of the stuffed breast reaches 160 degrees F (70 degrees C).

Pistachio Crusted Chicken





INGREDIENTS





* 1 cup chopped pistachios


* 1/2 cup bread crumbs


* 2 tablespoons Dijon mustard


* 2 tablespoons olive oil


* 2 tablespoons honey


* salt and pepper to taste


* 2 large skinless, boneless chicken breast halves, cut into 1-inch strips





DIRECTIONS





1. Preheat oven to 500 degrees F (260 degrees C). Lightly coat a baking sheet with cooking spray.





2. Mix together pistachios and bread crumbs in a shallow bowl. In a separate bowl, stir together Dijon mustard, olive oil, honey, salt and pepper until smooth. Dip chicken into Dijon mixture to coat, then coat with bread crumbs. Place onto prepared baking sheet.





3. Place into preheated oven and turn the oven down to 375 degrees F (190 degrees C). Bake until the chicken is no longer pink and the pistachio coating is golden brown, about 20 minutes.

Healthy Shepherd鈥檚 Pie





Preparation Time: 45 minutes


Cooking Time: 25 minutes

INGREDIENTS





2 pounds small yellow fleshed potatoes 鈥?halved


2 T Olive Oil


10 ounces cremini mushroom slices (optional)


2 carrots cut into 1 inch pieces


2 parsnips cut into 1 inch pieces


1 onion, chopped


1 pound lean ground beef (93% lean)


录 C flour


1 陆 C beef broth


陆 cup canned crushed tomatoes


Salt and pepper


戮 C 2% milk


1 陆 pounds baby spinach





DIRECTIONS





1. In a large saucepan, combine the potatoes and enough salted water to cover by one inch. Bring to a boil, then lower the heat and simmer until tender about 15 minutes. Drain, and return to the pot and cover.


2. In a large, deep skillet, 陆 T olive oil over high heat, add the mushrooms (if using) and cook, stirring until browned, about 5 minutes. Arrange in a greased 9 x 13 inch baking dish in an even layer.


3. In the same skillet, heat 1 T olive oil over medium high heat. Add the carrots, parsnips and onion, stirring, until crisp tender, about 7 minutes. Add the beef and cook, breaking it up, until no longer pink, about 4 minutes. Add the beef broth and tomatoes and simmer, stirring, until thickened, about 5 minutes; Season with salt and pepper. Ladle the meat mixture over the mushrooms, reserve the skillet.


4. Position a rack in the upper third of the oven and pre-heat to 400F. Add the milk to the potatoes and mash, adding salt and pepper.


5. In the reserved skillet, bring 1 C water to a boil. Add the spinach and cook, turning, until wilted, about 2 minutes. Season with salt and pepper. Transfer to a colander and drain, press to extract excess liquid. Arrange the spinach over the meat mixture, and then spoon the potatoes over the top. Drizzle with 陆 T olive oil and bake until golden, about 25 minutes.

Pasta Primavera


Giada DeLaurentis





3 carrots, peeled and cut into thin strips


2 medium zucchini or 1 large zucchini, cut into thin strips


2 yellow squash, cut into thin strips


1 onion, thinly sliced


1 yellow bell pepper, cut into thin strips


1 red bell pepper, cut into thin strips


1/4 cup olive oil


Kosher salt and freshly ground black pepper


1 tablespoon dried Italian seasoning


1 pound farfalle (bowtie pasta)


2 Tablespoons minced garlic


15 cherry tomatoes, halved


1/2 cup grated Parmesan





Preheat the oven to 450 degrees F.


In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.


Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.


Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

';Grilled'; Buffalo Wings:

Ingredients:





1 pound chicken tenders


salt


ground black pepper


1/3 cup prepared Buffalo wing sauce


4 ribs celery, cut into sticks


4 carrots, cut into sticks


2 kirby cucumbers, cut into spears


1/3 cup fat-free ranch dressing





Directions:





Season the chicken tenders to taste with salt and pepper.


Coat a ridged grill pan with olive oil spray and heat over medium-high heat, or heat an electric countertop griller.


Grill the chicken, turning once, about 4 minutes, or until browned and no longer pink in the thickest part.


Cut into bite-sized pieces. Transfer to a bowl and toss with the Buffalo sauce.


Place the chicken on a platter with the celery, carrots, cucumbers, and the ranch dressing for dipping. Serve with a good supply of wooden picks.








Kung Pao Flat Belly Chicken

Ingredients:





1 pound skinless, boneless chicken breast halves - cut into chunks


2 tablespoons white wine


2 tablespoons soy sauce


2 tablespoons sesame oil, divided


2 tablespoons cornstarch, dissolved in 2 tablespoons water


1 ounce hot chile paste


1 teaspoon distilled white vinegar


2 teaspoons brown sugar


4 green onions, chopped


1 tablespoon chopped garlic


1 (8 ounce) can water chestnuts


4 ounces chopped peanuts





Directions:





To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a glass dish or bowl and add marinade. Toss to coat. Cover dish and place in refrigerator for about 30 minutes.


To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste, vinegar and sugar. Mix together and add green onion, garlic, water chestnuts and peanuts. In a medium skillet, heat sauce slowly until aromatic.


Meanwhile, remove chicken from marinade and saute in a large skillet until meat is white and juices run clear. When sauce is aromatic, add sauteed chicken to it and let simmer together until sauce thickens.
4 teaspoons olive oil, divided


4 (6-ounce) salmon fillets, skin-on


2 teaspoons Essence, recipe follows


1 teaspoon salt


1/2 teaspoon fresh ground black pepper


1 recipe Fruit Salsa, recipe follows








Preheat a grill to medium.


Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.





Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.











Any type of Seasoning (also referred to as Bayou Blast):


2 1/2 tablespoons paprika


2 tablespoons salt


2 tablespoons garlic powder


1 tablespoon black pepper


1 tablespoon onion powder


1 tablespoon cayenne pepper


1 tablespoon dried oregano


1 tablespoon dried thyme








Combine all ingredients thoroughly.


Yield: 2/3 cup











For the Fruit Salsa:


3/4 cup small diced pineapple


3/4 cup small diced mango


1/2 cup small diced strawberries


1/4 cup small diced red onion


1 jalapeno, stemmed, seeded and finely chopped


2 tablespoons chopped fresh mint leaves


2 tablespoons freshly squeezed orange juice


1 tablespoon freshly squeezed lime juice


1/4 teaspoon salt








In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.


Yield: about 2 cups








Quesadillas





4 small corn tortillas


1 can (~15 oz) black beans (drained, rinsed and mashed with a fork)


1/2 cup cheese, grated


Spread mashed beans on each tortilla.


Sprinkle cheese over beans.


Add anything else interesting: salsa, leftover veggies, etc.


Fold each tortilla in half. Cook in ungreased skillet on medium heat until cheese melts.


Variations:


Use instant refried beans. They keep on your shelf nicely; just reconstitute with boiling water when needed.


Add salsa, sour cream (low fat), tomatoes, lettuce, mushrooms, onions.


Flip quesadilla on both sides when cooking.








Chicken Spaghetti Squash








4 servings


prep time: 10 minutes


cook time: 30 minutes





Cooked spaghetti squash creates long, skinny strands that look a


lot like thin pasta. Try it, for a novel experience.





1 medium spaghetti squash


1 TBS. olive oil


1/2 cup chopped onions


3 TBS. minced garlic


1 can (~15 oz.) crushed tomatoes


1 tsp. dried oregano or Italian seasoning


1 tsp. black pepper


8 oz. boneless chicken breast, cut in large pieces


Carefully cut squash in half lengthwise. (Tip: Microwave the squash whole for a few minutes, and it will be easier to cut safely.) Remove seeds. Place skin-down in microwave-safe dish. Add 1/4 cup water to dish and cover with plastic wrap. Microwave for about 10 minutes. Cool until safe to handle, then scoop squash out with a fork, creating long strands.


In a skillet, heat onions, garlic and oil until onions are soft. Add tomatoes, spices, and chicken. Allow to simmer 15-20 minutes. Check to make sure chicken is no longer pink.


Pour sauce over heated squash on serving dish and serve.


Variations:


Cook 8 oz. regular pasta according to package directions, instead of spaqhetti squash.

Use this for your meat dish with a side dish or two of vegetables, rice, or potatoes. You will find these packages near the meat section, they are not frozen. Ask a clerk for help.

5. Tyson's fully cooked whole chickens are delicious. I serve them often with S%26amp;W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy in jars, a canned vegetable, canned cranberry sauce, and frozen Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

6. Another thing you can do is cook in a slow cooker or a crock-pot. You put the meat into the crock-pot in the morning and it cooks all day long. The meal is ready at dinner time. Crock-pots can be bought at your grocery store, WalMart, Target, etc. BE SURE to read the booklet that comes with the crock-pot.
