Anyone have any healthy flapjack recipes?

My kid's made flapjacks at the weekend but covered them in melted chocolate.As the flapjacks were made with golden syrup they were really sweet and a one off as I don't like my kid's eating too many sweet things.I originally got them to make flapjacks because there a healthy alternative to chocolate bars and the like.My kid's don't like rasins but like most other fruits.Any recipes for flapjacks that I can add fruit(dried) to and whats the best ingredients to use rolled oats,granola etc...

Cocoa Flapjacks





Ingredients (use vegan versions):





1 cup whole wheat flour


1/2 cup flax meal


1 teaspoon baking powder


1/2 teaspoon baking soda


1/4 teaspoon salt


1/4 cup cocoa powder


1/4 cup sugar


1 cup soy milk


2/3 cup water


1/2 teaspoon vanilla


1/4 teaspoon cinnamon





Directions:





Mix together dry ingredients and then add wet. Stir vigorously until well-mixed.





Heat heavy pan with a few drops of olive oil (or use nonstick pan). Cook 1/3 cup of batter at a time, until mostly cooked on the first side, and flip and cook the other side (cook longer than you would think). Example, if it takes 5 minutes to look like the side up is almost cooked, flip and cook the ';cooked'; side up for the same amount of time.





It is very easy to undercook these!





I usually keep the cooked flapjacks in the oven on warm until all of the batter is cooked.





Spread vegan margarine and sprinkle with vegan sugar, or use a small amount of vegan maple syrup.Anyone have any healthy flapjack recipes?
Raspberry Oatmeal Pancakes





3 egg whites and 1 large egg





1 cup oats





1 tsp. vanilla extract





1 tsp. cinnamon





1 tsp. sweetener





2 tbsp. pancake mix





1 tbsp. water





3 tbsp. fresh raspberries





cooking spray


Instructions:


1. Mix the eggs, oats, vanilla, cinnamon, sweetener, pancake mix, and water in


a blender.


2. Preheat a 6'; skillet on medium heat and spray with cooking spray.


3. Pour the mixture into the pan and cook for 4 to 5 minutes.


4. Flip to other side with a spatula and cook for another 3 to 4 minutes.


5. Serve warm with raspberries over the top.
6oz butter


3oz sugar


4 1/2oz golden syrup


1 1/2oz black treacle


9oz rolled oats


dried fruit of your choice





in saucepan melt, butter, sugar, syrup and treacle and simmer till sugar is dissolved. Stir in oats and fruit, transfer to baking dish and bake gas 4 for 20-30 mins

makes 10-20


225 g porridge oats


75 g rice flour


150 g low fat spread, margerine or butter


100 ml rice syrup (golden syrup will substitute)


400 g fresh dates


50 g pine nuts


50 g raisins

preheat oven: 180掳C, fan 160掳C, 350掳F, Gas 4





1. Line a shallow baking tray approx. 15cm x 25cm (6'; x 10';) with baking parchment.





2. Remove the stones from the fresh dates and chop, put aside and prepare the flapjack mixture.





3. Gently melt the low fat spread and the rice syrup together.





4. Stir in the oats, flour, pine nuts and raisins, until well mixed.





5. Tip half of the oat mixture into the baking tray and press down firmly with your hands, ensuring the mix is well compacted.





6. Spread the dates on top, then finish off with the rest of the oat mixture, to make a 'date sandwich'. Press down firmly with your hands, again ensuring the mix is well compacted.





7. Bake in the centre of the oven for 25 minutes.





8. As soon as the flapjack is removed from the oven cut immediately into portions with a sharp knife, then allow to cool completely before removing from tray.








You can substitute other dried fruits for the raisins, i.e. dried cranberries, cherries or apricots, chocolate chips also make a nice change.





If packing up for lunch, snacks, sport fuel or picnics we suggest that you wrap it in greasproof paper then seal into a parcel with plastic film, or foil, this should keep it from crumbling up or drying out. Alternatively put it into a hard snack box to keep it safe. We would never advocate any foods be wrapped directly in plastic film.
