Anyone have any healthy recipes?

Oven roasted Asparagus:


1lb of fresh asparagus


extra virgin olive oil


salt and pepper


Arrange asparagus on a cookie sheet in a single layer.Drizzle with extra virgin olive oil.Sprinkle with salt and pepper to taste.Toss asparagus to coat in oil and seasonings.Make sure they remain in a single layer and put them in a 350 degree oven until they start to get a nice color to them.Dont over cook them.the ones you purchase in a can in the store,have an ok taste but are terribly overcooked.When cooking asparagus you want them to be tender,but not mushy.This would go along side any dish actually.However,i really love it along side eggplant lasagna.Your basicly with this making a regular lasagne,minus the noodles.You thinnly slice the eggplant and use them in place of the noodles.You can use your favorite sauce as well,i prefer a traditional marinara sauce.This would be a wonderful meal.Some nice sorbet or frozen yogurt sprinkled with some fresh berries,for dessert.Also,a nice big glass of fresh ice cold lemonade.Mmmm,I am hungry now.Have a good day hun,and good luck.Anyone have any healthy recipes?
This is kinda time intensive , but worth it to make. I don't put in the kitchen bouquet browning sauce, cashews, cheddar and still good.





VEGAN CHILI RECIPE:


Ingredients:


olive oil


2 large yellow onions, diced


2 cloves garlic, minced


1 red pepper, diced fairly large


1 green pepper, diced fairly large


2 (28-oz.) cans crushed tomatoes


1 tablespoon cumin


1/2 cup ground carrots


1/2 cup ground celery


5 mushrooms cut into quarters


1 package frozen corn


2 cans black beans (or any other kind of beans you like - chickpeas work well, too)


1 1/2 cup picante sauce


1 t. Kitchen Bouquet, browning sauce


salt to taste


grated cheddar, if desired


cashew nuts, if desired





Directions:





Saute onions in the olive oil. Add garlic. After onion and garlic are golden brown, add cumin, cayenne, and any other spices. Cook for a few minutes longer.





Add the diced peppers and saute for a few minutes. Combine the crushed tomatoes, carrots, celery, mushrooms, corn, beans, browning sauce, and picante sauce into the crock pot; add the onion mixture. Cook on low about 10 hours.





Serve with grated cheddar and cashew nuts, if desired.

Yep. Boil an egg. simple no fat no salt no hassle. Not much to wash up either.
